Commissioned for Myrtos, the London restaurant run by Kefalonia born master chef Assimakis, Yorgos 'composed' the rugged beauty of Ionian Symphony. It channels the Ionian spirit—azure seas, sunlit cliffs, and Myrtos beach's iconic sand, which is literally used as a pigments in the work. The vibrant layers fuse Greek heritage with its culinary passion, transforming the space into a luminous ode to the island's culture and memory.
